This is a cooking system that communicates with the easy-to-use oven console and can automatically maintain the desired temperature at five flame levels. This intelligent system lowers the flame but never extinguishes it, so the pizza is always prepared with a burning flame. The flame is wood-like, long and bright, reminiscent of the flair of a wood-burning oven.
There is also the Turbo Gas system developed by Marana Forni, a burner under the hob that optimizes heating, reduces costs and keeps the brick always warm.
The heat coming from this burner is then evenly distributed. Marana Forni gas fired pizza ovens have a special refractory stone bottom, which makes cooking very similar to the wood oven. The refractory material of this stone floor is 3,200 kg/m3, compared to 1,800/2,400 of a normal material, with a mechanical strength and wear resistance three times higher than that of porphyry. This high density and refractory rock provides high performance in heat storage, heat transfer, and heat recovery, and guarantees a long service life.
