Three of Marana Forni's five commercial pizza ovens are equipped with a rotating baking plate, which is used to prepare pizzas without having to constantly rotate or watch them. Such a baking plate can be moved on three levels, which in turn leads to enormous fuel savings. The hotplate is heated up in a few seconds by moving it to the top, where the temperature is the highest. When the baking process is finished, the oven signals itself. Of course, the refractory baking stone is also available fixed and not rotating.
The Marana Forni wood fired pizza ovens are equipped with Alare, that is an extremely heat-resistant grate made of AISI 321 refractory steel, on which the wood is inserted through the opening on the side of the pizza mouth, so that the wood does not have to be passed over the hob and maximum cleanliness on the hob is guaranteed.
